"Netherland is a potato land" says Roley. It's very popular both to grow it and eat it. The whole "rolling" idea came with an ice cream truck.
In Holland the numbers of rainy days are quite many, so they had to convert the idea- along with the truck for making fries. It is something what is nice to have even on a rainy day.
They started with a good research of finding the best farmers around with the perfect potato. Finally they found Agria potato. It has a perfect size, a nice yellow colour and a fine taste when it's fried.
Selecting the finest mayonaise and also the ideal oil to fry in was also important. Something they can buy in a big packings and it does not have E900 in it.
The old french truck of Frites de Campagne designed in a way that once they arrive somewhere they can instantly start frying. It's quite impressive, and they can make up to 300 portions per hour.
