Smokin' Roaster

Max Rodrigues Nunes was a chef for 20 years. He has been working in many restaurants; he is very much feeling at home in any kitchen. Funnily we met him by his minibus where he sells grill food. As he said he felt in love with the atmosphere of selling grill from these vehicles. Freshly and enthusiastically setting up his new venture, he is talking about what he expect from this form of cooking in the future.

In the opinion of Max, street food and food trucks are part of some sort of hype nowadays. But this trend comes along with bigger changes than you would think.

Beside eating nice things people also like to spend time together. And today you have to bring specialty to them rather to draw them in to a restaurant. Although there are many other competitors on a food market and you simply have to be always the best, this competition is also making sure to maintain a certain quality and variety.

The first big success for max and his Smokin’ Roaster was Food Soul Festival in Amsterdam. When I first met them, they were so busy we could hardly talk. They were selling more than a thousand pieces of lobster burger, and the salmon- bacon and blue vain cheese burger has already sold out by the end of the day. With their assortment of food and also their trucks appearance they definitely represent top quality.

While Max used to work in the kitchen with his colleagues being isolated from the guests, now he suddenly found himself chatting with customers. When you are a restaurant chef for such long years, you certainly need to change your attitude.

Max and his team upgraded their Mercedes truck into a fancy rolling kitchen with also installing an impressive grill roaster. It’s perfect for the festivals! We started to ruminate whether is this the future. Who knows? But we both agreed that you have to grab the opportunities what hypes offer. In this case to make something lasting with quality.

Max also realized that people like to see more and more behind the scene details of kitchens, and that these people form a friendly company where nice to belong. Perhaps this community will determine and shape the future of gastronomy.
